UDP-Glycosyltransferases in Edible Fungi: Function, Structure, and Catalytic Mechanism

UDP-glycosyltransferases (UGTs) are the most studied glycosyltransferases, and belong to large GT1 family performing key roles in antibiotic synthesis, development of bacterial glycosyltransferase inhibitors, animal inflammation. They transfer glycosyl groups from nucleotide UDP-sugars (UDP-glucose, UDP-galactose, UDP-xylose, UDP-rhamnose) acceptors including saccharides, proteins, lipids, secondary metabolites. The present review summarized recent UDP-glycosyltransferases, their structures, functions, catalytic mechanism, especially edible fungi. future perspectives new challenges were also understand structure–function relationships future. outputs this field could provide a reference recognize function, structure, mechanism for understanding biosynthesis pathways metabolites, such as hydrocarbons, monoterpenes, sesquiterpene, polysaccharides
